Cherry Tomato Bruschetta

This delicious and simple appetizer is perfect for showcasing the fresh flavors of summer, topping with a drizzle of sweet, rich Maple Syrup!

INGREDIENTS:

  • 3 cups cherry tomatos, diced
  • Fresh Basil, about 15 leaves sliced thinly into ribbons
  • Goat or Feta cheese
  • 1 loaf baguette or other French loaf
  • Kosher salt and black pepper
  • 2-3 tablespoons extra virgin olive oil
  • 2-3 garlic cloves, minced
  • Amber Rich Maple Syrup or Dark Robust Maple Syrup

INSTRUCTIONS:

  • In a large non-stick pan, heat olive oil until simmering and then add tomatoes. Let them cook undisturbed for 2 minutes. Add garlic and spices. Cook for another 2 minutes, stirring occasionally. 
  • Slice bread into 1/2-inch slices. Brush both sides of bread with olive oil. Place slices on baking sheet and place in oven to broil for 1-2 minutes on each side or until golden brown. 
  • Top the baguette slices with cheese of choice. Then add the tomatoes and top with fresh basil. For final touch drizzle with Maple Syrup. Serve and enjoy!
