This delicious and simple appetizer is perfect for showcasing the fresh flavors of summer, topped with a drizzle of sweet, rich Maple Syrup or Smoked Maple Syrup.

INGREDIENTS:

3 cups cherry tomatos, diced

Fresh Basil, about 15 leaves sliced thinly into ribbons

Goat or Feta cheese

1 loaf baguette or other French loaf

Kosher salt and black pepper

2-3 tablespoons extra virgin olive oil

2-3 garlic cloves, minced

Amber Rich Maple Syrup or Dark Robust Maple Syrup

INSTRUCTIONS:

In a large non-stick pan, heat olive oil until simmering and then add tomatoes. Let them cook undisturbed for 2 minutes. Add garlic and spices. Cook for another 2 minutes, stirring occasionally. 

Slice bread into 1/2-inch slices. Brush both sides of bread with olive oil. Place slices on baking sheet and place in oven to broil for 1-2 minutes on each side or until golden brown. 

Top the baguette slices with cheese of choice. Then add the tomatoes and top with fresh basil. For final touch drizzle with Maple Syrup. Serve and enjoy!
