"My version adds a teaspoon of Jalapeño Maple Sriracha stirred into the BBQ sauce before glazing — just enough heat to cut through the fat without competing with the rosemary. I've also done this with a full rack of lamb low and slow in the oven, finished under the broiler with the glaze. That's the dinner party version. Both are correct."
Maple & Herb Roasted Lamb Chops
Lamb chops are already one of the better arguments for staying home and cooking. Add a brush of Smoked Maple BBQ Sauce in the last few minutes, and the case is closed. The sauce caramelizes against the fat, the herbs cut through the richness, and the whole thing comes together faster than it has any right to.
INGREDIENTS
- 8 lamb chops (about 1 inch thick)
- 3 tbsp Sugar Bob's Smoked Maple BBQ Sauce, plus more for serving
- 2 tbsp olive oil
- 3 garlic cloves, finely minced
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme leaves
- 1 tsp sea salt
- 1 tsp cracked black pepper
Optional: 1 tsp Sugar Bob's Jalapeño Maple Sriracha stirred into the BBQ sauce for heat
INSTRUCTIONS
- Make the herb rub: Combine olive oil, garlic, rosemary, thyme, salt, and pepper in a small bowl. Rub generously over both sides of each lamb chop. Let sit at room temperature for 30 minutes — this step matters.
- Sear: Heat a cast iron skillet or grill pan over high heat until very hot. Sear lamb chops 3 minutes per side for medium-rare. Do not move them while they're searing.
- Glaze: In the last 2 minutes of cooking, brush each chop generously with Smoked Maple BBQ Sauce. Let it set and caramelize — you want the edges to catch slightly without burning.
- Rest: Remove from heat and rest for 5 minutes before serving. Do not skip this.
- Serve: Arrange on a platter and drizzle with a little more Smoked Maple BBQ Sauce at the table.
Pro Tip: If you're cooking on an outdoor grill, move the chops to indirect heat before glazing. Direct flame and sugar don't always get along. Give the sauce 2 minutes over lower heat, and it will set without burning.
