You’ll need

  • 8 large sea scallops, patted dry
  • 1 tbsp Sugar Bob’s Smoked Maple Sriracha
  • 2 tbsp unsalted butter
  • 1 small shallot, finely minced
  • 1 tsp fresh lemon juice
  • ½ tsp neutral oil (grapeseed or canola)
  • Flaky sea salt
  • Fresh cracked black pepper

How to make it

  1. Heat oil in a skillet over medium-high heat.
  2. Season scallops lightly with salt and pepper.
  3. Sear scallops 2–3 minutes per side, until golden brown and caramelized. Remove from the pan and set aside.
  4. Lower the heat and sauté shallots in the same pan until translucent.

  6. Add lemon juice to finish the sauce.
  7. Return scallops to the pan briefly to coat in the glaze, then serve immediately.

You’ll need

  • 2 oz blanco tequila
  • 1 oz fresh blood orange juice
  • ½ oz fresh lime juice
  • ½ oz Sugar Bob’s Smoked Maple Syrup
  • 2–3 thin slices fresh jalapeño (adjust to taste)
  • Ice
  • Blood orange wheel or thin jalapeño slice, for garnish

How to make it

  1. Add tequila, blood orange juice, lime juice, smoked maple syrup, and jalapeño slices to a shaker with ice.
  2. Shake 10–15 seconds to chill and infuse the flavors.
  3. Strain into a rocks glass over fresh ice.
  4. Garnish with a blood orange wheel and/or jalapeño slice.

How to make them
